A community based coffee shop and studio
Growing up in Alaska can teach someone many things - Including the need for a cup of coffee that is strong, welcoming, and as comforting as the community which shares it. Ashley relocated to Texas in 2014, where she graduated with a degree in Pastry Arts from the Auguste Escoffier School of Culinary Arts. She worked her way through the Austin restaurant scene under some of the industry’s best chefs. In 2019 Ashley and her husband Jason moved to the small community of McDade. Using her previous experience, Ashley started frequenting the Elgin markets and showcasing her take on French style pastries.
In 2022 they decided to open their first brick & mortar - bringing a love of coffee and pastry into a shared community space where creation and art could thrive. As they grow with Elgin, they strive to continue supporting the local community and offering the highest quality goods available.
In January 2025, Ashley and Jason opened Lo-Fi in the original Southside Barbecue space dating back to 1888. Ashley and her small team offer a variety of specialty pastries, sourdough bread, coffee and more. Ashley continues to create pottery while growing Lo-Fi Farms.
